My cooking philosophy is to personalize every loaf, cupcake or pie to reflect my tastes and personality. I usually seek out recipes that have a subtle twist on the traditional ingredients- for example, I usually would rather bake chocolate chip cookies with bacon in place of regular cookies. Additionally, I am lactose intolerant, so I do a lot of vegan baking, or I make vegan substitutions for milk, cream cheese and butter. Typically, I use Earth Balance in the place of butter, almond milk in the place of milk, vinegar and milk in the place of buttermilk and Tofutti Better than Cream Cheese in place of regular cream cheese. If you are not lactose intolerant or don’t have the above ingredients on hand, regular milk, cream cheese and butter will work just fine for most of these recipes.
