Lately, it seems like people have been figuring out ways to put bacon in everything: cupcakes, chocolate bars, vodka… I’ve even had deep-fried banana fritters wrapped in bacon. I’ve never met anyone that doesn’t love bacon, in fact, when I eat breakfast at my parent’s house I still have to guard the bacon on my plate because my little brother will try to steal it. It’s one of those miracle foods that makes everything better… kind of like garlic or chocolate.
Today, while I was trying to figure out what to do with my three hours between class, I decided that I was going to jump on the bacon train. After a couple minutes of blog surfing, I found the perfect recipe. Candied bacon and chocolate chip cookies. Yum.
These cookies taste exactly how you would expect. Chocolate chip cookies plus bacon. The sweet and salty mix is a great twist on this traditional favorite, and definitely impressed my friends. A must-try!
Candied Bacon and Chocolate Chip Cookies
Makes 24 cookies
8 slices thick bacon
1/2 cup lightly packed brown sugar
2-1/4 cups all purpose flour
1/2 teaspoon baking soda
3/4 cup Earth Balance, softened
1/2 cup sugar
1 cup packed light brown sugar
1 tablespoon vanilla extract
1 whole egg
1 egg yolk
2 cups semisweet chocolate chips
Preheat the oven to 350º. Line a baking sheet with tin foil sprayed with non-stick spray and lay bacon in a single layer and sprinkle with brown sugar. Bake at 350º for about 25 minutes, turning every 10 minutes, or until crispy. Be careful at this point, because the candied bacon will burn very quickly after the 20 minute mark. Turn the oven temperature down to 325º. Let cool and cut into small pieces.
In a large bowl, combine the Earth Balance and sugars using an electric mixer until light and fluffy. Add the whole egg, egg yolk and vanilla, mix to combine. In a small bowl, mix flour and baking soda well. Slowly add the flour mixture to the butter and sugar mixture until just combined. Using a wooden spoon, stir in the chocolate chips.
Roll the cookie dough into 24 golf ball sized balls. Press the candied bacon on the topside of the ball and place on lined baking sheets. Bake at for 15-18 minutes.
