Attention: stop your search for the perfect cream cheese frosting here! This recipe produces a light, perfectly whipped frosting that never fails. I put this on the my Easter Carrot Cake, and everyone loved it!
Vanilla Cream Cheese Frosting
Makes 1.5 C frosting, or enough for one 9″ round cake
1 8-oz. packet cream cheese
1/2 C (one stick) unsalted butter, room temperature
1.5 t vanilla extract
4 C confectioners sugar
Blend together butter and cream cheese. The longer you beat, the softer the frosting will become. Mix in vanilla and continue beating for 1 minute. Add confectioner’s sugar in 1/2 cup increments until frosting is fluffy and smooth.
Variations:
Orange cream cheese frosting: prepare as above, but add 1-2 T frozen concentrated orange juice and the zest of one orange.
Chocolate cream cheese frosting: prepare as above, but add 3-4 T of unsweetened cocoa powder, to taste. If frosting becomes too stiff, thin with a few drops of milk.
